Proterial (formerly Hitachi Metals) Aogami 2 (Blue Steel #2) is a premium high-carbon Japanese steel renowned for excellent edge retention ( HRC) and sharp cutting performance, often utilized in high-end knives. When laminated with stainless SUS 405, it combines a rust-resistant body with a superior, sharp edge, though the edge still requires maintenance.
Core Layer: Aogami 2 (Blue Paper Steel No. 2)
The center of the laminate is a premium Japanese high-carbon steel known for its exceptional cutting ability.
Performance: It achieves a high hardness of 62–65 HRC, providing outstanding edge retention and a "silky" cutting feel.
Composition: Contains approximately 1.05–1.15% Carbon, with added Tungsten (1.0–1.5%) and Chromium (0.2–0.5%) to increase wear resistance and toughness compared to "White" steels.
Maintenance: As a carbon steel, the exposed edge is reactive; it will develop a patina over time and can rust if not dried immediately after use.
Cladding Layer: SUS 405 Stainless Steel
The outer layers consist of SUS 405, a ferritic stainless steel that sandwiches the core to improve durability and ease of maintenance.
